* Shahi Puris *

2 cups whole-wheat flour
1 tbsp melted ghee
1 cup finely chopped fresh fenugreek leaves
1 tbsp thick curds
Salt to taste, 1/4 tsp coarsely ground black pepper
Oil for frying
Mix together for the filling:
1/2 cup grated paneer
1/4 tsp ginger paste
1-2 green chillies, finely chopped
1 tbsp chopped coriander

Sift the flour, salt and pepper. Rub in the ghee. Add the fenugreek leaves and curds, mix well and keep aside for 10 minutes.
Knead to a stiff dough using minimum water. Divide into 12-13 portions.
Roll out into small rounds. Place the filling in the centre. Cover with dough and seal. Roll out into puris on an oiled rolling board, using an oiled rolling pin.
Deep fry and serve immediately.
